Man's is possesive and is the proper use for this instance.

"Man's" implies possessive or ownership. "Mans" would be an improper way of
multiple man but should in fact be "Men" but that would make no sense. Also
when using a name that ends in "s" such as Jesus. The proper possessive would
be "Jesus'" the extra "s" is not necessary and is optional.
