I can make the node tree's just fine in DS to do the effects, but
when I save the tree as a preset there seems to be no way to build a
custom UI for it. So to use it, one does have to 'expand' the node
and go hunting for what works for the effect.

You can't make your own interfaces for them, but instead of expanding the effect into it's original nodes, when you select the folded effect, in the property panel you'll see a drop-down list at the top.. you can click in there and get a list of all the nodes inside the folded effect and jump to any one directly.

Not anywhere near what you're looking for, but saves you from having to unfold if you don't want to do that.

7.5. I saw that 7.6 has expressions now. Can this be used to create
the custom UI? Will it allow you, like Shake or FCP, to create dummy
interfaces that you link to internal node parameters?

You could, but there is no "generic interface" that exists that would let you create a property panel with only what you want on it (like 2 numeric boxes, 3 sliders, etc.)

As a side question, are there any plans to do much simpler nodes for
some things? e.g. saturation node to change saturation rather than a
full blown color correct node. I hate using all that processing
overhead to bump one part of an effect.

There is no "overhead" in the color corrector on Nitris, pretty much everything you do in it is still a realtime process. Even though all of the other properties are there, you're not taking any performance hit by only using saturation for instance.
