I guess, Victor, part of the workaround work flow could be to move the
cache files out of the project folder, archive, move the video files out
and move back in the cache files, archive again...

That is exactly what the support article spells out - it just looks more intimidating than it really is.

If you want to do it the touchy-feely-GUI way, you could accomplish the same thing by creating a separate media folder on your video drive, and using Configure Storages to add it as a new storage location. Then use the Media Tool to find all your caches for the project, select them, and use the 'Move To' function to move them to the other storage. Then go back into Configure Storages, and remove the storage from the indexer; Archive the project; Go back into Configure Storages, add the new storage back to the indexer, and remove the original one... then archive again. Then one more trip to Configure Storages and put your real storage back in.

This accomplishes the same goal, which is basically to just alternately "hide" a chunk of the media from the indexer when you go to archive, so it only lays down what it's aware of. You then do a switcheroo so it sees the other set of media, and archive again.

Perhaps if I get extremely bored sometime I'll write a little standalone utility that will do this for you, but in the end it's really not that difficult to do yourself! You just need to find the GUID of the project whose media you're trying to play games with, and then move some files around a couple of times. The only time it could get a little complicated is when you have multiple projects sharing the same media.
