Hey Sam
Here's a scene I created for a friend who wanted to animate an object over a
ground terrain object. ( does that make sense) Sort of what you are after,
just select the cube and move it around.

has anyone had any experience constraining an object to a surface whilst
maintaining the ability to interactively drag the object around to
animate it across the surface?
this would be a great addition to these constraints from an animation
point of view...

ive been trying every combination of constraints i can think of, but
without success.
i think it may need some kind of kinky scripting solution?

suggestions?
experiences?
