Hi Guillaume,
there is an option in the viewports -> Display Options ->Shaded Mode
->Vertex Color that you can set to:
Never Show (use material)
But I'm affraid it's not per object.

My workaroud is to create a second gray vertex map and set the vertex
color display to this map in the material. But it is not perfect. The
object is washed by this map.
How to disable the vertex map display ?
