Thanks Guy. I didn't know this option. Too bad there isn't a property to control the vertex color by object.
Not a big pb anyway.

there is an option in the viewports -> Display Options ->Shaded Mode ->Vertex Color that you can set to: Never Show (use material)
But I'm affraid it's not per object.
