If you're gonna get technical then "Polygons" is plural indicating that more than one poly is selected and on a sphere they (plural) are not flat ;)
Imo, the only confusing part Christopher, is if you mean flaten to an axis? or flatten to the averaged normal? Either way, the only way is to do what Mario suggested. Sorry.
