if you're talking polygons there's no such thing as Us and Vs at mesh level, connectivity is arbitrary, which is what makes polys nice and easy to use. If you're using surfaces then it's easier to identify them.
regardless, there's no immediate way to do it, but as XSI will still show selection overlays even with wireframe off, you can make a cluster of elements you want visible, turn display wireframe off, and capture/render to OGL with the cluster(s) selected.
