Or just use a Constant shader plugged in to the Surface port of your material and set the color to RGB 0,0,0 and A 0 or 1 depending if you want it to show up in the Alpha or not.

Do you mean you want to matte something out? If so, you can apply a lambert and turn it off, this matting out your object and in its alpha too.
