If you have a good track, then it shouldn't be a difficult to use a a
rather large, ( or use multiple images on multiple grids ) together to
cover your entire landscape.
Just pick 'ideal' frames and project those on your other grids, and do
your matte painting on those images.
Sounds like you are on the right path, just need to carry it through
the whole shot.
