I've been out of the office the last couple of days so this is my first chance to thanks for all the suggestion - cheers!
As the content we need to record is pretty CPU intensive, these software-only solutions don't quite cut it even on our fastest machine.
James - I did consider going for a HDMI card but decided to save some pennies and get a VGA/RGB capture card that supports various resolutions up to 1600x1200. This is plenty for our requirements. Here's the link:

I'm still waiting for it arrive, but here's a sample of its performance capabilities...

Using a P4, 3.2 Ghz computer, with a Asus P5GD2 motherboard, 1 disk dedicated to the Operating System, and 3 extra drive to handle the video stream.
performances:
1024x768, 16 bit @ 66 fps. CPU load is 33 %, direct to disk, no frame drop.
1280x1024, 16 bit @ 40 fps, CPU load is 40%, direct to disk, no frame drop.
1280x1024, 32 bit (BRGx) @ 20 fps, CPU load is 20%, direct to disk, no frame drop.

might be a long shot...but what about a black magic intensity? its hdmi
in / out, so you could pump the output from video card into the
intensity, then back out to the monitor, whilst recording (it does
1920x1080 recording I believe...so plenty of res im guessing)...although
you might need some sort of dvi splitter as well if you wanted
