I am sure some of the driver links are outdated by now, but it gives you a good Idea of what you have to go through. Basically just network and audio drivers, as well as the appropriate graphics card drivers.
My system works great with 12 gigs of ram in it and the ATI card. I helped two other friends do the same setup. I haven't tried it with the nvidia card though. I went with the ATI anticipating whenver Apple gets off there ass and starts supporting new gen Graphics cards, I would upgrade.
No. 1 reccomendation. Put Windows on its own hard drive. If I remember correctly I just took out my OSX disk (so I wouldn't get confused... which happens a lot) and ran a standard XPx64 install on a fresh disk. I updated the 3 drivers and never looked back. Except for the time I corrupted my windows install by booting it up with a beta of VMware fusion (supposedly this works ok now).
