Last time I heard about it the "purity law" affected a lot of techniques that produce "chemicals" naturally through fermentation, stirring, filtering etc, and it culled out completely some very interesting cloudy weiss. The law doesn't only limit the use of artificial additives, it implicitly limits the final result regardless of the process.
"chemicals" happen in nature all the time ;) and the most sophisticated brews are based on making sure some of them happen in the right amount at the right time.
